The iconic one-pot tomato-based rice. Nigerian Jollof - cooked over firewood for the smoky "party jollof" flavour - is considered the definitive version across West Africa.

Pounded yam, eba, amala, or fufu served alongside egusi (melon seed), banga (palm nut), ogbono, or ofe onugbu (bitter leaf) soups. The national communal dining experience.

Suya

Spiced beef or chicken skewers grilled over open charcoal. The Hausa-Fulani street food staple. Best found at roadside stalls after dark - the aroma is unmistakable.

Pepper Soup

Light but intensely spiced broth with goat meat, catfish, or offal. The go-to remedy for the harmattan cold and a staple in nkwobi joints.
